Caesar Chicken Kabobs feature tender marinated chicken thighs that are skewered and grilled to perfection with a medley of fresh veggies. Everything about these kabobs practically screams summer! There’s just enough caesar dressing brushed on these bad boys to really seal the deal on that mouthwatering flavor.

I have three magical words for you – caesar chicken kabobs. And yes, they’re exactly as delicious as they sound! During the summer, I love looking for any excuse to fire up the grill, and these chicken kabobs are just the thing to snack on at your next backyard bbq or pool party.
They’re filling, flavorful as can be and SO easy to make. Letting the chicken marinate for at least 30 minutes (but preferably a little longer) is really the only part of this recipe that requires a little patience. Other than that, everything just gets chopped, tossed onto skewers and grilled to perfection.
The caesar flavor comes from several angles. First off, the chicken meat itself is actually marinated in caesar dressing to really infuse it with flavor. Then when you grill the kabobs, you’re gonna want to lightly brush it all with some more dressing so it cooks on their nicely.

Your shopping list is delightfully short! Here’s a quick look at what you’ll need to make this budget friendly recipe:
- Chicken Thighs – They’ll need to be boneless and skinless. You can use chicken breast meat if preferred – just note that the cook time may differ.
- Caesar Dressing – I love using homemade caesar dressing whenever I can!
- Bell Pepper – Red peppers are my absolute favorite for these kebobs. However, you can use any bell pepper you like best or already happen to have on hand.
- Red Onion – Try not to swap this onion with any other color! Red onions pack a real flavorful punch that the others just don’t.
- Zucchini – Really try to make sure that all of your zucchini pieces are chopped into the same sized.
- Parmesan Cheese – For the absolute best flavor and texture, freshly grate the parmesan cheese yourself right off the block.
- Skewers – You can use wooden or metal skewers. Just note that if they’re wooden, you really need to soak them in water for at least 30 minutes prior to using. Do NOT skip this step!
How to Make Caesar Chicken Kabobs

- Marinate the chicken. Add the chopped chicken thighs to a bowl and toss with a cup of the caesar dressing. Make sure it’s all pretty evenly coated. Then, cover and let it marinate in the fridge for at least half an hour or overnight. Keep in mind that the longer it sits, the more flavorful it’ll be.
- Assemble the skewers. Place the marinate chicken and veggies on the skewers. The goal is to have everything evenly divided. Then, place them all on a large plate (a baking sheet works best for me) and season with some salt and pepper.
- Grill them. This is the fun part! Heat your grill to medium-high and oil the grates. Place the kabobs on the grill and cook for about 4 minutes. Then, lightly brush them with more caesar dressing, flip, and keep cooking for another 4 minutes or until fully cooked.
- Enjoy! Sprinkle the cooked chicken kabobs with some parmesan and a drizzle of caesar dressing.

Ingredients
- 3 pounds boneless skinless chicken thighs, cut into larger bite size pieces
- 1 1/2 cups caesar salad dressing, divided
- 1 red bell pepper, cut into 1 1/2 inch chunks
- 1 red onion, cut into 1 inch chunks
- 1 zucchini, cut into 1/2 inch slices
- 1/2 cup grated parmesan cheese
- 8 wooden or metal skewers, If using wooden skewers, soak them in water for at least 30 minutes

Instructions
- Add the chicken to a large bowl and pour 1 cup of the dressing over the chicken. Toss to coat. Cover and marinade for 30 minutes or overnight.
- Thread the chicken, pepper, onion and zucchini on a skewer alternating until all the ingredients have been divided between the skewers.
- Arrange the kabobs on a large baking sheet or tray and season with salt and pepper.
- Preheat the grill to medium high heat and oil the grates.
- Arrange the kabobs on the grill and grill for 4 minutes. Lightly brush the remaining dressing over the kabobs. Flip and continue grilling for an additional 4 minutes or until cooked through and golden brown.
- Serve the kabobs sprinkled with parmesan cheese and drizzled with remaining caesar dressing.
