Red Skin Mashed Potatoes

Side dishes shouldn’t be fussy, or take a lot of time. I love a good casserole side but potatoes always have my heart because they’re easy to adapt into something completely new. Red Skin Smashed Potatoes are my new favorite because they’re crazy easy to make but the flavor is out of this world.

Tender cooked red potatoes are mashed until creamy and smooth are stirred with melted browned butter before being seasoned with Everything Bagel Spice. Just three ingredients and you have one easy side dish that’s going to be a hit with everyone that takes a bite.

Ingredients You Will Need

You only need three ingredients to make these Everything Spiced Red Skin Mashed Potatoes.

  • Baby Red Potatoes – I like to use the baby potatoes because they cook up quickly and you don’t need to chop. You can use the large red skinned potatoes but be sure to cut them into uniform chunks before cooking so they cook evenly.
  • Butter – Salted butter….you need the salty solids to create the brown butter, also known as beurre noisette. Brown butter is made by cooking butter long enough to turn the milk solids brown while cooking out any water in the butter. It tastes nutty, warm and has much more flavor than just regular melted butter.
  • Everything Bagel Seasoning – The most epic (and trendy) spice blend, it has kosher salt, garlic, onion, poppyseeds and sesame seeds so you don’t need much else to season your potatoes. We like to use our homemade Everything Bagel Seasoning. Make a big batch…put it on everything. Literally.

How To Make Red Skinned Mashed Potatoes

Homemade Mashed Red Potatoes are super simple to make.

  1. Add the potatoes to a large pot and fill with water just to cover.
  2. Season with salt.
  3. Bring the potatoes to a boil and cook until fork tender, approximately 20-30 minutes.
  4. Brown the butter in a small saucepan over medium heat. Set aside.
  5. Drain the potatoes and return to the pot.
  6. Mash the potatoes with a potato masher or fork.
  7. Pour the butter over the potatoes and add the Everything Bagel Seasoning.
  8. Stir to combine.
  9. Serve immediately.

Easy, creamy and perfect, Red Skinned Mashed Potatoes are loaded with brown butter and Everything Bagel Seasoning for the fastest side dish ever.

Ingredients

  • 2 lbs baby red skinned potatoes
  • 2 tbsp kosher salt
  • 8 tbsp butter
  • 1/4 cup Everything Bagel Seasoning

Equipment

  • stock pot

Instructions 

  • Plade the potatoes in a large pot or dutch oven and fill with water until the potatoes are just covered. Season with salt.
  • Bring the potatoes to a boil and then turn the heat to low. Simmer for 20-30 minutes until potatoes are fork tender. Drain and return the potatoes to the pot.
  • While the potatoes cook, melt the butter in a small saucepan over medium heat. Cook the butter, while swirling the pan occasionally, until the butter turns a golden brown. Remove from the heat and set aside.
  • Mash the potatoes with a potato masher or fork.
  • Pour the butter over the potatoes and add the Everything Bagel Seasoning. Stir to combine.
  • Serve immediately.

Notes

Mashed potatoes can be made up to 3 days in advance and stored in the refrigerator in an airtight container.
To reheat, warm in the microwave or in the oven in an oven safe dish.
