Hey pizza fans! Do I have a great recipe for you today. I searched high and low for the best Cauliflower Pizza Crust forever. It wasn’t an easy task because there are so many not great cauliflower pizzas out there right now, so I took one for the team. You’re welcome!

If you’re a pizza fan but are trying to limit your carb intake or are looking for a tasty gluten-free crust, you may want to give Cauliflower Pizza Crust recipe a try. It’s made of cauliflower rice which is super easy to make from a head of cauliflower or cauliflower florets. But you can, pretty much, buy pre-riced cauliflower at any grocery store these days.

The cauliflower rice is blended with ingredients to help it stick together without using bread crumbs or other carb heavy ingredients. It’s a great substitute for a traditional pizza crust recipe when you’re on a low carb or keto diet.

I’ve tried soooo many cauliflower pizzas but the best one I found was the Costco Cauliflower Pizza Crust. It has great flavor and I knew that’s what I wanted in my homemade cauliflower pizza.

I didn’t want to eat my pizza with a fork, like so many others I’ve tried. I wanted to be able to pick up a slice of pizza and eat it like I would at my favorite pizza joint. This Cauliflower Pizza Crust recipe is exactly that.

How To Make Cauliflower Pizza Crust

This cauliflower pizza crust dough recipe is really simple to make and is not super labor intensive. The key to perfect crust is being patient and allowing the crust to crisp up. Because there’s a ton of moisture in your cauliflower, you’ll have to let it bake out of the crust in order for it to crisp up. To speed up the process you can cook cauliflower rice in a skillet for about 10-15 minutes until it is dried out and fluffy.

  1. If you’re using fresh cauliflower rice, steam it briefly in the microwave for about 3-4 minutes. Allow to cool and then wrap in paper towels, clean dish towel, cheese cloth or nut milk bag tightly to squeeze the water out of it. You want your cauliflower to be dry before mixing with the other ingredients. If you’re using frozen cauliflower rice, allow to thaw and then squeeze the water out of it using the same method.
  2. Transfer cauliflower rice to a large bowl. Add the egg, mozzarella cheese, parmesan cheese, garlic powder, italian seasoning, salt and pepper.
  3. Mix the ingredients together to combine.
  4. Line a baking sheet with parchment paper and coat with cooking spray. I use a baking sheet without a rim to make it easier to transfer the crust directly to the rack halfway through baking.
  5. Shape the cauliflower into a large circle on top of the parchment or pizza stone approximately 1/2 inch thick pressing it together to form the crust. 
  6. Bake crust dough in a 400 degree oven for 30-35 minutes or until the crust is golden and firm.
  7. Carefully slide the parchment paper with the cauliflower crust from the baking sheet directly to the oven rack and bake for an additional 15 minutes. This will ensure the bottom of the crust is dry and crispy so you don’t have to eat it with a fork.

That’s it! Now, you can top your cauliflower pizza crust with your favorite tomato sauce, cheese and toppings. We like to top our’s with my homemade pizza sauce, it’s no cook so you can literally throw it together while your pizza crust is baking. Bake for an additional 8 minutes or until your cheese is melted and bubbling.

How To Freeze Cauliflower Crust Pizza

Making your cauliflower crust ahead of time and freezing it is a great timesaver for weeknight dinners. I like to make four smaller pizza crusts and freeze them for quick meals when time is at a minimum but you can also freeze the larger crust, too.

Follow all the instructions for making your cauliflower crust and then transfer the crusts to the freezer on a baking sheet. Freeze until firm and then wrap the pizza crust tightly in plastic wrap. Cover with foil and freeze for up to 2 months. 

To bake a frozen cauliflower pizza crust, transfer the crust to a parchment lined baking sheet and bake at 400 degrees until hot. Top your crust with your sauce, cheese and toppings continuing to bake for an additional 8 minutes.

How To Make Cauliflower Crust Without Cheese

If you’re lactose intolerant or are looking to keep the dairy to a minimum, you can skip the cheese and add an additional egg to your cauliflower pizza crust dough. The end result will be a little more eggy but it’s still tasty and pizza like.

Pro Tips for Perfect Cauliflower Pizza Crust

  • Be sure to use a flat cookie sheet or preheat baking stone lined with parchment to bake your cauliflower crust. If you don’t have a cookie sheet or baking stone, you can use a rimmed baking sheet inverted. This will help when transferring the parchment to the baking rack for the end of the cooking time.
  • Be patient, your patience will be rewarded with crispy crust that’s tasty and amazing. The baking time can vary so check your crust at the 30 minute mark and don’t move it to the oven rack until it’s golden brown with crispy, firm edges.
  • Go light on the toppings! As tempting as it may be to load it up, too much sauce or cheese will add extra moisture (and heft) to your crust which could cause it to fall apart.

A flat cookie sheet is my go-to for pizzas, baking breads, cookies and more. It’s an economical baking pan that has so many uses.
