Hooray for FriYAY! Am I right? Unless you have to work this weekend….or attend a 6 year olds birthday party. But at least the week has ended and if you’re like me….this week dragged on like a salty slug. Seriously. I thought it would never end….but it did and Friday is here! FINALLY! I have a long work day that I absolutely MUST cram into 4 short hours so I can get a few errands done this afternoon. But other than that…it’s home free and happy hour for me! I plan to toast the event with a margarita and THIS Easy Pineapple Salsa.
I was working on a few pineapple recipes for the Harry & David blog with their super FABULOUS organic pineapples so I had a ton leftover just begging to be used. Their golden pineapples are grown and picked in accordance with the USDA National Organic Program. And they’re perfect for any fruit lover that might be a bit sensitive to the natural acids normally found in pineapple. They are sweeter than average pineapple and juicy too. And since I hate to waste food…you’ll be seeing lots of pineapple recipes, just like this super healthy smoothie bowl, all over the blog in the next few days. My favorite thing to make with pineapple is this incredibly Easy Pineapple Salsa. It comes together in just a few minutes, no cooking required and is ready for plopping on just about anything. Or just snacking with a giant bowl of chips. It’s juicy and refreshing, and the perfect addition to any spring or summer party.
This Easy Pineapple Salsa has just a few fresh ingredients….pineapple, of course….jalapeno, red bell pepper, red onion, lime zest, lime juice, chopped cilantro, salt and pepper. That’s it. How easy is that? It’s great a heaping tower of these tortilla chips and a side of pineapple guacamole. Chase it all down with that margarita I mentioned early and you have one epic party for 10 or 1.
Easy Pineapple Salsa
- 2 cups finely chopped pineapple
- 1 red bell pepper, fine dice
- 1 jalapeno, finely chopped (remove the seeds if you want it less spicy)
- 1/2 cup finely chopped red onion
- Zest and juice of one lime
- 1/4 cup fresh chopped cilantro
- pinch of salt
- In a medium bowl, toss the pineapple, bell pepper, jalapeño, onion, zest, lime juice, cilantro and salt to combine. Cover and chill for 15-20 minutes. Serve with chips or as desired.
- Can be made up to 24 hours in advance.
