Not your ordinary salad dressing, this Easy Greek Vinaigrette is loaded with fresh flavors. Kalamata olives, feta cheese, olive oil and herbs are combined to create the most powerful flavor you’ll ever add to your salads. Makes a great marinade for chicken, beef and lamb, too!
Soooo….I’m totally addicted to Bachelor in Paradise. I don’t want to be but when I’m finally able to get the TV all to myself and the dogs are snoring to my left and right….AND I have a pint of Mint Chocolate Chip ice cream in my hand….it’s the best thing on television at that very moment. It’s mindless and silly and my husband absolutely hates it. But I think he’s secretly hooked too because sometimes he’ll plop down next to me and watch the whole thing. I think deep down we both remember what it was like to be single and all the ridiculous things you’d do for love. Like stalk your ex when you’re “on a break.” I may have done that once at the urging of my best friend who was supposed to be the voice of reason and take me straight home after a night of drinking. BUT I’ll save that story for another day because I’m 3/4’s of the way through my pint of ice cream and salads will be on the menu for the remainder of the week. We’ll just blame it on the two hour episode of B-I-P.
I’m not much of a salad fan unless it’s totally loaded up with flavors and textures that border on unhealthy. I’ll eat a salad for the pure sake of getting more veggies in my diet but I PREFER one that’s packed with addicting ingredients like bacon or bacon or cheese or more bacon. Get the picture? So, I like to make my own salad dressings….this way I have full control over the level of flavor burst I put into them. Homemade dressings are so easy to make, we really don’t need to buy them at the store. Plus, they’re not loaded with preservatives and weird stuff that makes them shelf stable. This Easy Greek Vinaigrette is no exception.
I made this Easy Greek Vinaigrette in about 3 minutes. First, I created a “paste” of sorts with kalamata olives, garlic and feta cheese. There’s the flavor….the salty briny burst that you’re going to love. Then, I whisked it all together with extra virgin olive oil, oregano, basil, lemon juice, red wine vinegar, a teensy pinch of salt and fresh ground pepper. That’s it! You’re ready to top any of your favorite greens with this masterpiece. I also love to use it as a marinade for chicken, beef, lamb, shrimp….the options are endless for this flavor packed dressing!
