Steak Fries

Have you ever had seriously good fries at a steakhouse and thought, “why aren’t my fries this good?!” Well, that’s because you haven’t been making Steak Fries! Simply put, these fries are just russet potatoes that are sliced into half inch wedges, coated in the best savory mixture, and baked until golden and oh so crisp. You might not even want ketchup… These fries are pretty great all alone!

So, what makes Steak Fries different from others? There are two major elements of this recipe that separate it from your average potato wedge. For starters, there’s steak seasoning in the mix that coats the wedges, so you really bring that savory steak flavor all the way home. Make sure you prepare your steak with the very same seasoning to really make the meat and fries compliment each other.

Steak Fries are also crispy as can be. That comes from the combination of both cornstarch and baking powder! Those two ingredients work in tandem to make the fries supremely crispy on the outside, while still being so fluffy and soft on the inside. These crispy, savory baked fries are SO easy to make and can be prepped in just a few minutes. No need to overpay a steakhouse for their fries anymore!

How to Make Steak Fries

Steak Fries are so easy to make! The best part? There’s no need to peel the potatoes. They’re so much better with that seasoned skin left on!

  1. Soak the potatoes. After you cut the potatoes into wedges, soak them in a large bowl filled with cold water and apple cider vinegar for about 30 minutes. Drain and pat dry with a paper towel.
  2. Coat the potatoes. Arrange the potatoes on a nonstick baking sheet. Toss them with olive oil and the mixture of steak seasoning, cornstarch, and baking powder.
  3. Bake. Bake the potato wedges until they’re golden brown and crisp! This should take about 20-25 minutes. Then, flip the wedges, and cook for another 15-20 minutes so they’re crispy and evenly cooked on all sides.

Do I have to soak the potatoes?

Yes! Soaking the potato wedges in some cold water with a splash of apple cider vinegar helps to remove excess starch. This results in crispier fries. If you skip the step, your wedges likely won’t be super crispy, they’ll be sticky and soft.

Ingredients

  • 4 large russet potatoes, scrubbed and cut into wedges approximately 1/2 inch thick.
  • 2 teaspoons apple cider vinegar
  • 8 tablespoons olive oil
  • 3 tablespoons steak seasoning
  • 3 tablespoons cornstarch
  • 1/2 teaspoon baking powder

Equipment

  • 1 baking sheet

Instructions 

  • Fill a large bowl with cold water and stir in the apple cider vinegar. Add the potatoes and soak for 30 minutes. Drain.
  • Pat the potatoes dry with a paper towel and set aside.
  • Preheat oven to 425˚F.
  • Arrange the potatoes on a baking sheet coated with cooking spray and drizzle with olive oil.
  • Toss the potatoes to coat.
  • In a small bowl, whisk together the steak seasoning, cornstarch and baking powder.
  • Sprinkle the seasoning mixture over the potatoes and toss to coat.
  • Arrange the potatoes cut side down and transfer to the oven.
  • Bake until golden brown and crisp, approximately 20-25 minutes. Flip the fries and continue to bake for an additional 15-20 minutes until golden and crisp.
  • Serve immediately with ketchup, garlic aioli or yum Yum sauce

Notes

Don’t skip the soak as this step helps remove some of the starch which helps your potatoes get crisp in the oven.
Be sure the cut sides of the potato are facing down on the baking sheet for maximum browning and crispness. 
Mix it up by switching out the steak seasoning and using your own flavors!
