Herbs de Provence is a blend of dried herbs from southern France that adds some French flair to all your cooking! Use it for fish, vegetables, stew, and so much more.

Herbs de Provence (also known as herbes de Provence) is that little je ne sais quoi that will take all your favorite French dishes to the next level. The name literally means “herbs of Provence,” referring to that picturesque region of southern France with endless fields of lavender and stretches of Mediterranean beaches. (Doesn’t that sound nice?! Don’t you want to go there right now?) Although the blend might seem like a time-honored tradition, it actually didn’t start popping up in stores and cookbooks until the 1970s!

Here’s another fun fact: in France, herbs de Provence does not include lavender. In the United States, lavender is kind of the defining ingredient! (But hey, if you’re not a fan of lavender, that means you can leave it out and your homemade herbs de Provence will be EXTRA authentic!)

I used Herbs de Provence in many of my recipes like The Best French Onion Soup Recipe and this Chicken Fricassee Recipe but you can use it like an all purpose seasoning similar to Italian Seasoning. Don’t be intimidated, it only sounds fancy.

Ingredients for Herbs de Provence

Here’s a quick rundown of what you’ll need for this recipe. For the full measurements, scroll down to the recipe card. All of the herbs used here are dried.

  • Rosemary – Adds a bold, piney flavor with slight citrus undertones.
  • Fennel Seed – Provides a sweet, anise-like flavor.
  • Savory – Contributes a peppery, slightly bitter flavor, adding depth and balance to the mix.
  • Thyme – Offers an earthy flavor with hints of lemon. It brings all the Mediterranean vibes!
  • Basil – Brings a sweet, slightly spicy flavor with an ever-so-subtle touch of clove.
  • Marjoram – Adds a mild, sweet, and citrusy note.
  • Lavender Flowers – Infuses a delicate, floral sweetness and a fabulous aroma. 
  • Italian Parsley – Provides a clean, fresh flavor to brighten the mix.
  • Oregano – Adds a robust, slightly astringent, and earthy flavor.
  • Tarragon – Brings a sweet, licorice-like taste to our herbs de Provence.
  • Bay Leaf Powder – Adds a subtle, slightly spicy aroma. This ingredient is optional, and if you don’t want to buy a bottle but DO want to include it, you can grind whole bay leaves with a spice grinder.

How to Make and Store Herbs de Provence

Just like my other seasoning blend recipes, from Homemade Blackening Seasoning to Taco Seasoning Mix, this recipe is a total breeze to make!

  1. Mix it up. Whisk all the ingredients together in a bowl.
  2. Bottle the blend. Transfer the herbs to a jar or other sealed container.
  3. Store. Keep your herbs de Provence in a pantry or cool dry place. They won’t spoil, per se, but they will lose their flavor and aroma over time. Assuming you’ve used very fresh herbs to make this seasoning, they’ll last about 6 months before they start to loose their oomph.

My Favorite Ways to Use Herbs de Provence

You can add this seasoning blend to dishes before, during, or after you cook them.

  • Use it in crackers. I love adding herbs de Provence to homemade sourdough crackers and serving them with fancy French cheeses. So good!
  • Sprinkle it on roasted vegetables. Toss your favorite vegetables in olive oil and sprinkle with herbs de Provence before roasting. Root vegetables and winter squash (like this roasted delicata) are especially delicious!
  • Add it to marinades. Mix the herbs with some oil, red wine vinegar, and garlic for a flavorful marinade to use with chicken, pork, or seafood.
  • Mix into dips and dressings. Add a few tablespoons to white bean dip, whipped cottage cheese, or vinaigrettes.
  • Use it in soups and stews. Add this blend as a garnish to creamy vegetable soups like mushroom soup
  • Make herb-infused olive oil. Dip crusty baguette slices in a mixture of oil and herbs de Provence for a tasty Bread Dipping Oil
  • Stir it into honey. I love to drizzle this mixture over slices of pears and cheese.
  • Add to roasted nuts. Toss your favorite nuts in olive oil and herbs de Provence before roasting.
  • Use it as a rub for meat. Rub the seasoning onto chicken, pork, or seafood with oil before grilling or roasting.

Ingredients 

  • 2 tablespoons dried rosemary
  • 1 tablespoon fennel seed
  • 2 tablespoons dried savory
  • 2 tablespoons dried thyme
  • 2 tablespoons dried basil
  • 2 tablespoons dried marjoram
  • 2 tablespoons dried lavender flowers
  • 2 tablespoons dried Italian parsley
  • 1 tablespoon dried oregano
  • 1 tablespoon dried tarragon
  • 1 teaspoon bay leaf powder, optional

Instructions 

  • Gather all ingredients.
  • Add the herbs to a bowl and whisk to combine.
  • Transfer to an airtight container and store in a cool dry place.
