Most Chicken Divan recipes are, most often, made with canned soup like cream of mushroom soup or cream of chicken soup for the base of the creamy sauce. We make our creamy white sauce with pantry ingredients and completely from scratch.
- Chicken – Leftover chicken breast makes this classic chicken casserole come together in a snap. If you don’t have leftovers on hand, you can easily roast boneless skinless chicken breasts rather quickly to add to the dish.
- Chicken Broth – The base of the mornay sauce is made with chicken broth or chicken stock. We love using homemade but your favorite store brand works well.
- Dairy – I love using half and half for a rich but still light cream sauce. You can substitute with whole milk, heavy cream or even sour cream for a thicker consistency.
- Broccoli – Fresh broccoli florets are my personal favorite but to keep things moving quickly, frozen broccoli florets are always a time save.
- Rice – White rice soaks up the sauce beautifully and since you’re using cooked rice this is a great way to use up leftover rice. Brown rice is a great substitute and adds a great nutty flavor.
- Bread Crumbs – To keep things light, I like to use Panko Bread Crumbs but regular breadcrumbs work in a pinch.
- Sherry – A staple in the original chicken divan recipe, dry sherry makes this recipe sing with flavor.
- Butter – Unsalted butter is used for the roux to create the sauce. If you don’t have it, regular salted butter will work, just taste the sauce for seasoning before adding kosher salt and black pepper.
- Lemon – Using the lemon juice and lemon zest adds a fresh flavor to the creamy sauce.
- Parmesan cheese – I love the salty, nutty flavor of parmesan in the sauce. If you prefer, you can add cheddar cheese for an extra cheesy sauce.

- Make the roux. Melt the butter in a saucepan, whisk in the flour and cook until golden.
- Make the sauce. Slowly whisk in the chicken broth, then add the half and half, sherry, lemon juice and zest. Cook until thickened and season with salt and pepper.
- Assemble the casserole. Layer the broccoli and rice in a 9×13-inch baking dish. Spoon half the sauce over the top, then add the chicken.
- Add the cheese and topping. Stir the Parmesan into the remaining sauce and pour it over the chicken. Toss the panko with melted butter and sprinkle it over the casserole.
- Bake. Bake at 350°F until the sauce is bubbling and the panko topping is golden brown.

- Drain frozen broccoli well. Extra moisture can thin the sauce and make the casserole watery.
- Start with cooked chicken that is still juicy. Rotisserie chicken works especially well because it stays tender while the casserole bakes.
- Cook the roux until golden. This gets rid of the raw flour flavor and adds more depth to the sauce.
- Let the sauce thicken. Before assembling the casserole, the sauce should be creamy enough to coat the back of a spoon.
- Use freshly grated Parmesan. It melts more smoothly into the sauce than pre-grated cheese.

My Chicken Divan recipe adds cooked rice and a buttery panko topping, with a creamy Parmesan sauce made completely from scratch.
Make Ahead Chicken Divan
Chicken Divan is a great casserole to assemble ahead of time. Prepare the casserole through the sauce step, cover tightly and refrigerate. Keep the buttery panko topping separate and sprinkle it over the casserole just before baking so it stays crisp.
If you’re baking the casserole straight from the refrigerator, allow a little extra baking time and make sure the center is completely hot before serving.
How to Store and Reheat Chicken Divan
- Refrigerate: Store leftover Chicken Divan in an airtight container in the refrigerator for up to 4 days.
- Microwave: Reheat individual servings in the microwave until hot.
- Oven: Cover the casserole and warm it in a 350°F oven until heated through.

Equipment
- 1 9×13 baking dish

Ingredients
- 4 tablespoons unsalted butter, cut into pieces, for the sauce
- 5 tablespoons all-purpose flour
- 2 cups chicken broth
- 1/2 cup half and half
- 1/4 cup dry sherry
- zest and juice of one lemon
- 1/4 teaspoon kosher salt
- 1/4 teaspoon fresh ground pepper
- 3/4 cup freshly grated Parmesan
- 3 cups frozen broccoli florets, thawed and well drained
- 3 cups cooked diced chicken breast
- 1 cup cooked white rice
- 1 cup panko bread crumbs
- 1 tablespoon butter, melted, for the breadcrumb topping
Instructions
- Preheat the oven to 350 degrees.
- Melt the 4 tablespoons butter in a medium saucepan over medium heat. Stir in the flour and cook until the mixture becomes deep golden brown.
- Slowly whisk in the chicken broth cooking until the mixture begins to thicken. Whisk in the half and half, sherry, lemon zest and juice. Remove from the heat. Stir in the salt and pepper until smooth.
- Place broccoli in an ungreased 13-in. x 9-in. baking dish. Cover with the rice and then half of the sauce. Top with chicken. Stir the Parmesan cheese into remaining sauce until smooth. Pour the sauce mixture over the chicken.
- Toss the panko breadcrumbs with the 1 tablespoon melted butter and sprinkle evenly over the casserole. Bake, uncovered, at 350° for 40 minutes or until golden brown and bubbling.
- Serve immediately

You could totally leave it out if you want. I’ve even substituted dry white wine for the sherry with great results if you have that around.
